Strawberry Upside Down Cake ~ A delicious twist on a classic, using box cake mix, fresh strawberries, jello mix and marshmallows! So easy to make too!
Strawberry Upside Down Cake is one of those recipes that you HAVE to make during the summer. It is perfectly moist, sweet, and PACKED with amazing strawberry flavor. There are only a fewv steps and its easy enough for a beginner level baker!
Here is how to make it:
All you will need for this recipe is fresh strawberries, strawberry jello mix, marshmallows, and a box of white cake mix (including the ingredients to prepare it listed on the box).
Hull and quarter the strawberries and arrange them in the bottom of a lightly greased 13×9″ baking dish.
Next, evenly sprinkle the strawberry jello mix over the strawberries in the baking dish.
If you would like you could substitute lemon jello mix for a refreshing strawberry and lemon flavor combo!
Then, evenly disperse the marshmallows over the jello.
Prepare the boox of whie cake mix according to the directions on the box, and evenly pour it over the other ingredients.
Bake this amazing concoction and allow it to cool in the pan for 20 minutes.
After cooling for 20 minutes in the pan, run a butter knife along the edges, cover with a cutting board a little larger than the baking dish, and CAREFULLY flip it over.
Good LORD its beautiful! And its smells SOOOO good too!

Ingredients:
- 1 white cake mix, prepared according to box directions
- 2 cups strawberries, chopped
- 1 6 oz box strawberry jello
- 3 cups miniature marshmallows
Instructions:
- Preheat oven to 350º.
- Prepare cake batter according to the box directions. Set aside.
- Place strawberries in a greased 9x13 baking dish.
- Evenly sprinkle dry jello mix over top of strawberries.
- Next, add marshmallows.
- Finally, pour cake batter over top.
- Bake for 50 minutes or until a toothpick comes out clean.
- Allow cake to cool for 20 minutes. Then gently run a knife around the
- edges and flip cake out onto a serving tray.
