Summer Berry Protein Pancake Bites

As a busy mama, breakfast can be a struggle. Breakfasts high in protein are a goal for me so I know my kiddos and I have enough brain food to last us til lunch. These summer berry protein pancake bites are perfect because they are SUPER quick to make, they have an extra boost of protein, and they have a wonderful flavor thanks to the berries.

We make a large batch to freeze leftovers for easy reheating in the microwave on busy mornings. All we do is allow them to cool completely, package up 5-6 summer berry protein pancake bites per sandwich bag, and store all of the sandwich bags in a gallon freezer ziploc bag. Then just pop it in the freezer!

I can’t tell you what a relief it is to have a hot protein packed breakfast ready for the kiddos by just popping a few on a plate from the freezer and microwaving them for 1 minute. No syrup needed thanks to the berries, so its mess free! It really doesnt get better than that for me,

The process to make these summer berry protein powder pancake bites is super simple. Just mix the batter up with a boost of protein powder, top with whatever berries you like (we do blueberries and strawberries), bake it and enjoy! We like boxed pancake mix for this but you could always use your favorite homemade pancake batter if you’d prefer.

Summer Berry Protein Pancake Bites


  • 1 cup pancake mix
  • 2 tbsp. protein powder
  • 2/3 cup whole milk
  • 1 large egg
  • 1 cup fresh mixed berries


  • Preheat oven to 350 degrees F and grease a mini muffin pan with cooking spray. Set aside.
  • Whisk pancake mix, protein powder, milk, and egg together in a medium bowl until combined. Fill each muffin cup 2/3 of the way with batter and top with mixed berries.
  • Bake for 12-14 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 5 minutes before removing from pan and serving.

    Can you use frozen berries instead of fresh? Sometimes frozen are fresher..
