The leaves are slowly beginning to change, a few are dropping from the trees and beginning to collect in our yard. The weather is cooling off, and it feels like Fall is really officially starting. With that comes all the baking for the holiday season, which is my favorite thing to do! This bread is truly a home run on flavors, and the whole family gobbled it right up! It barely had time to fully cool off before all that was left were a few innocent crumbs.

I knew I had to share this recipe with you guys! It is just too good not to share the love, with anyone who enjoys some pumpkin spice. This pumpkin bread is absolutely incredible and a must to save back for your recipes to make again! It is moist, fluffy, and has tender crumbs that burst with pumpkin spice flavors, that melt in your mouth! Not to mention the pecan halves sprinkled on top that make this look like it came out of Martha Stewart magazine!

If you need to know one thing about me, it is that I love to bake. It can be therapeutic and relaxing, and of course I love to mix and test out spices and more, to create delicious goodies for my family to enjoy! This bread is so simple, but taste like it would be complicated to make. I love when people think I slaved all day on a delicious treat when really it took no time at all to make.

This pumpkin bread also freezes beautifully, in case you want to make a few extra and toss in the freezer. Just thaw and it is just as moist and fluffy as the day you made it! I also make these in a mini loaf pan and take to friends and neighbors around the holidays. It is a little present for them to show I am thankful for them. So if you know someone who enjoys pumpkin like you, maybe make them a loaf and take as a surprise.

Sometimes you crave a plain ol’ slice of pumpkin bread with no frills, and that is what this bread is. Packed full of spices and pumpkin flavor, that is simple to bake, that will leave you feeling satisfied at the end.

Easy Pumpkin Pecan Bread

Yield: 2 loaves

Ingredients:

  • 3 cups sugar
  • 4 eggs
  • 2 sticks butter, melted
  • 1 (15 oz.) can pumpkin puree
  • 3 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 to 1 1/2 cups pecans, chopped + about 16 whole pecans for the tops

Instructions:

  • Heat the oven to 325 F. Line 2 bread pans (or grease and flour them) and set aside.
  • Combine sugar, eggs, and melted butter in a large bowl. Whisk well. Add in pumpkin puree, and whisk again til well combined.
  • In a medium sized mixing bowl, combine the flour and spices. Gradually add the flour mixture to pumpkin mixture, about a cup at a time, until blended. Stir in pecans.
  • Divide the mixture between the prepared pans, and bake for 70-80 minutes or until a toothpick can be inserted in center, and comes out clean.
  • Cool in the pans for 10 minutes on wire racks, then remove the loaves from the pans and let cool completely on wire racks. Slice and serve!
