It was my little sister’s birthday a full on Chinese food night with stir fry, egg rolls, shrimp fried rice, dumplings, and crab rangoon on the menu. As always, when there is a wide variety of cooked dishes to be made at the same time, the kitchen quickly got very hot, and I got very frustrated.
I could only wrangle one little helper into the kitchen that night, and I had him making the egg rolls. While he was working I made the fried rice, and stir fry. Then I noticed the wonton wrappers sitting on the counter….
The part everybody was looking forward to the most.
It’s a good thing it doesn’t take that long, I thought. I started getting out the ingredients and I went to the fridge to grab the crab last….
I frantically looked through the kitchen for anything I could use to substitute from the crab. For a while I was seriously thinking about using Spam. Luckily I noticed a few cans of Bumble Bee® Prime Fillet® Albacore Tuna with Jalapeños & Olive Oil. My helper was about halfway done with frying the egg rolls, so I grabbed the tuna and started working.
I don’t know if you guys already know this about me, but I can be a super lazy chick. My clothing normally consists of pajama pants, a tank top, and a dirty hoodie. All to be topped off with an extremely messy bun. So, I love food that allows me to be in and out of the kitchen quickly so I can tend to my other duties.

Every year on Mother’s Day, I have the worst gift. It all started back in second grade…..DUN DUN DUN! I glued jolly ranchers to construction paper in the shape of a heart.Which she couldn’t eat because it was so covered in glue… So it just sat there… taped to the wall… collecting dust. Until eventually……..I stole all of the jolly ranchers. One by one.
Meanwhile, my sister (the kind with the neat handwriting that colors in the lines) gave her a stack of handmade coupons promising hour long foot massages. Really sis?!?!?! You gotta out do me by that much???
Then in third grade, I painted a terracotta pot for her to plant flowers in. It was a mess! I am not the most artistic girl around and crafts aren’t really my thing. I don’t remember her face when I handed it to her because I made sure not to look.
Ah yes. Then there was fourth grade. My class made knee pots for the mothers and mine was the most misshapen disaster that was ever placed on this earth. Seriously. Think of the ugliest possible clay pot made by a fourth grader you’ve ever seen. No, really. Take a minute to think about this.
It was 10 times worse than that.
I am a big fan of easy, tasty, and quick foods. And lately, I have only been cooking things that take 20 minutes or less.
Why? Oh, I don’t know. I guess I am just getting lazy! 😉
My favorite of these 20 minute or less meals has got to be (drum roll please………) spaghetti and garlic bread!
