Peanut Butter Banana Muffins

Peanut butter banana muffins are a favorite in our home! We end up making them very often in our home. My kids can tend to get hungry quickly after breakfast so it’s important to have something filling and nutritious to keep them going and full until lunch time. Not only is the flavor of these peanut butter banana muffins absolutely amazing, the bananas are very good for you and the peanut butter has health benefits of its own as well as being super filling and delicious!

Anybody else have those morning s when you can’t open your eyes all the way and just need some peace and quiet but the kids are begging LOUDLY for food? I don’t know about you but I am NOT a morning person. Like, at all.So once a week (usually on a Sunday night) I make two batches of these peanut butter banana muffins. One regular as written below in the recipe, and one with coconut milk and flax egg to make a vegan version for my son with allergies.

Then in the morning, while I’m barely alive stumbling to the kitchen to make some coffee, I grab the muffin container, and literally throw them in the general direction of my children to make them go away! Does that make me a bad mom? NOPE! Makes me a human with needs.

You could also add a little pizzazz by adding some chopped peanuts (or other nuts), mixing in some chocolate chips, protein powder of choice, or even putting spoonfuls of peanut butter in the center of the batter before baking for a peanut butter filling!

Peanut Butter Banana Muffins

Ingredients:

  • 2 cups all-purpose flour
  • 1?2 cup lightly packed brown sugar
  • 1 tablespoon baking powder
  • 1?4 teaspoon salt
  • 1?2 cup peanut butter
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla exact
  • 2 eggs (or flax egg if desired)
  • 3?4 cup milk (or non-dairy milk of choice)
  • 2 ripe bananas, mashed

Instructions:

  • Preheat the oven to 375°F.
  • In a large bowl, mix together the flour, brown sugar, baking powder and salt. Create a well in the center and add the remaining ingredients. Mix together the wet ingredients in the center and gradually add in the flour mixture from the sides until it is completely combined.
  • Spoon about 1/4 cup of the batter into 18 lined muffin cups. If desired you can top them with slices of banana. Bake for 20 to 25 minutes.
