Mac & Cheese for One

I was going to make this post a little more adult oriented, like, “Here’s an easy lunch when you don’t want a ton of leftovers!” BUT, my inner mama is about to show, haha! My 3-year-old daughter tends to wake up around 3 a.m. a few times a month because she has to go potty and is also “starving” as she puts it. I REALLY would like to give her a granola bar and send her back to bed so this mama can get some shut-eye BUT somehow I was gifted with a quite bougie child so she wants something hot and homemade.

By now I have this super simple and quick recipe memorized. Y’all if my 3 a.m. brain can manage this anyone during the day time can lol.

I gotta say, I totally get why this is a constant request. Its creamy, flavorful, and really hits the spot when you’re in need of some soul warming goodness!

In about 15 minutes you have a scrumptious mac and cheese for one! In those 15 minutes we like to have some surprisingly deep conversations for such a small person. And believe me, a super smart little person is both a blessing and a curse. She understands so much and is very independent, but also doesn’t fall for any tricks (she will investigate herself before believing you) and can get into SO much trouble such as stacking 3 chairs on top of each other to reach the cookies you attempted to put out of her reach. She is also smart enough to know that this is some damn good mac and cheese haha!

I highly suggest printing this recipe out and putting it on your fridge for those middle of the night cravings or for your older children to make themselves so you don’t have to go to the kitchen anytime they are hungry.

Mac & Cheese for One

Prep Time: 5 minutes

Cook Time: 12 minutes

Total Time: 17 minutes

Serving Size: 1

Mac & Cheese for One

Ingredients:

  • ½ cup macaroni (can use Gluten Free pasta)
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour (can use Gluten Free all-purpose flour)
  • ½ cup milk of your choice
  • ½ cup shredded cheese of your choice
  • Salt and pepper to taste
  • Optional: pinch of paprika and cayenne pepper

Instructions:

  • 1. Bring a small saucepan of lightly salted water to a rolling boil. Add macaroni and cook according
  • to box directions.
  • 2. While pasta cooks, melt butter in a separate small saucepan over medium heat. Once melted,
  • whisk in flour and cook until mixture thickens – about 1 minute. Pour in milk and continue to
  • whisk to keep a smooth consistency until mixture thickens and bubbles (about 3 minutes).
  • 3. Remove pan from heat and stir in shredded cheese. Add salt and pepper to taste. Add (optional)
  • pinch of paprika and cayenne pepper, and stir.
  • 4. Drain pasta once cooked and fold it into the cheese sauce until completely coated. Serve warm.
