Mac & Cheese for One

I was going to make this post a little more adult oriented, like, “Here’s an easy lunch when you don’t want a ton of leftovers!” BUT, my inner mama is about to show, haha! My 3-year-old daughter tends to wake up around 3 a.m. a few times a month because she has to go potty and is also “starving” as she puts it. I REALLY would like to give her a granola bar and send her back to bed so this mama can get some shut-eye BUT somehow I was gifted with a quite bougie child so she wants something hot and homemade.

Balsamic Mushroom Salad|Ten at the Table

Every year on Mother’s Day, I have the worst gift. It all started back in second grade…..DUN DUN DUN! I glued jolly ranchers to construction paper in the shape of a heart.Which she couldn’t eat because it was so covered in glue… So it just sat there… taped to the wall… collecting dust. Until eventually……..I stole all of the jolly ranchers. One by one.

Meanwhile, my sister (the kind with the neat handwriting that colors in the lines) gave her a stack of handmade coupons promising hour long foot massages. Really sis?!?!?! You gotta out do me by that much???

Then in third grade, I painted a terracotta pot for her to plant flowers in. It was a mess! I am not the most artistic girl around and crafts aren’t really my thing. I don’t remember her face when I handed it to her because I made sure not to look.

Ah yes. Then there was fourth grade. My class made knee pots for the mothers and mine was the most misshapen disaster that was ever placed on this earth. Seriously. Think of the ugliest possible clay pot made by a fourth grader you’ve ever seen. No, really. Take a minute to think about this.

It was 10 times worse than that.

Ultimate Cheesy Tuna Pasta Casserole

Who else celebrates Valentines Day with a group of friends?

Every year, me and my girls get together for a home cooked dinner party on valentines day (NO BOYS ALLOWED!) and we all bring a dish. Most of these dishes are skinny, or light, because most of us have just made new years resolutions to lose weight. I always try to focus more on what my body needs, rather than starving myself of something and calling it a “diet.”

I make sure I get a good amount of fat and protein to help my body function properly. This is why I bring this Cheesy Tuna Black Bean Casserole to the dinner party. It provides the essential nutrients,and it tastes great. And I make sure to cook more than necessary, so the girls can take leftovers home with them.

The first time I made it for them, they asked me for the recipe, but I didn’t have one to give them! I had just improvised a casserole using what I had on hand (trying to keep it healthful), and it was really good. Luckily, I had remembered what I did and was able to replicate it and write down the recipe.

It took, like, an hour to name it. We finally decided on Ultimate Cheesy Tuna Pasta Casserole. And I’m stickin’ with that.

One Pan Enchilada Pasta

One of my favorite meals my mother used to make us as a child is enchiladas. I loved how good the house always smelled, the fact that she let me open the cans (yeah, we didn’t always make our own food from scratch), and the flavor! Enchiladas are definitely one of my better childhood memories. Well, I haven’t had enchiladas in FOREVER! So when I saw a recipe for a one pan enchilada pasta on Pinterest, I new what was going to be for dinner that night!
