We all know how Monday goes… Just had a great weekend, woke up to a major “to-do” list, and you can’t even get the kids out of bed. Once they’re up, you gotta make sure each one is wearing clean matching clothes and has all of the papers they need signed. Sometimes they can’t find their backpacks, or their other shoe. And sometimes you have a massive migraine and you’ve got about 12 minutes to be out the door.
Oh, but you also have to get food into their bellies before you can think about finding your keys.
Mornings like these, I like to break out the breakfast burritos from the freezer. All I have to do is warm them in the microwave, and serve! Super easy, super quick, and it makes the whole morning seem less stressful.
The burritos themselves are very delicious, and filling. Imagine a bowl of amazing scrambled eggs with peppers, onions, and sausage. Now imagine its wrapped in a tortilla for convenient consuming. Yes. That’s exactly what your Monday needs! Is it not?
They are also loaded with protein to keep everyone fully charged for the day ahead.
Here’s how I make it:
Saute the onions, the green pepper, and the sausage in the butter until the meat is browned. Beat the eggs and the milk together and pour it into the skillet with the onions and peppers.Β Add the salt and pepper. Cook, stirring occasionally, until eggs are set.
Scoop 1/2 cup egg mixture onto tortillas.
Sprinkle with cheese, and fold the tortilla up like a burrito.
Freeze or put all burritos in a baking dish, and bake at 350 degrees for 20 minutes or until heated through.
Freezer Instructions:
Wrap burrito in a sheet of foil. Seal tightly and place in freezer bags. When bag is full, remove all air and seal. Freeze.
To serve: Remove foil and put damp paper-towel-wrapped burrito in microwave. Reheat for around one minute. Serve with salsa.
Here’s the recipe:
Ingredients:
- 1/4 cup butter
- 1/3 cup chopped onion
- 1/3 cup chopped green pepper
- 18 eggs
- 1/2 cup milk
- 1 cup breakfast sausage (or chopped ham)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups shredded cheddar cheese
- 20 flour tortillas
Instructions:
- Saute the veggies and sausage with the butter. Beat eggs and milk, and add it to the pan.
- Add salt and pepper, stirring occasionally, until eggs are set.
- Scoop 1/2 cup egg mixture onto tortillas. Fold ends under and roll up. Freeze or put all burritos in a baking dish, and bake at 350 degrees for 20 minutes or until heated through. Serve with salsa.
This is just what my family needs too! Thanks for the inspiration for freezer-friendly breakfast burritos – I’m going to make a vegan version to keep handy for busy mornings π
How will you make it vegan? That sounds interesting! π
Sounds like a really good recipe. Will try, hopefully my teenagers will fall in love with them. Thanks for sharing!

Oh wow, this looks great!! I’m trying this on my family soon!
But let’s be honest, I”M the one who wants to try these!
Popping by from Friday Flash at the Jenny Evolution. π
I’m about to embark on the journey of first-time motherhood, and this looks like a simple, delicious recipe to make up ahead of time and reheat when needed. Thanks! And congrats on being featured on the Friday Flash Blog party π
Could I do this with corn tortillas
I haven’t tried it with corn tortillas yet. If you try it let me know how it went! π
I’m excited to try these! Maybe a silly question, but what size tortillas do you use? Burrito or fajita? Thanks! π
We use the burrito size. I think the fajita size would be too small.
Yum! We used to do this all the time during the summer when we went boating! It’s the perfect way for a yummy warm meal early in the morning! They stay hot too in the foil (if you bake them) So you have them whenever you get hungry! Great idea for quick school mornings!
What a great idea! I’ll have to keep this in my idea book for next school year. Stopping by from the Weekend Recipe linkup. Hope you have a wonderful weekend!
Yum! These would be great to have on hand for a quick grab and go. I’ll have to try them!

Hi! Just to confirm as it’s been a long day, you bake them and then cool and put into the freezer correct?
I feel dumb asking this but like I said it’s been a long day and my brain just shit it pants.
If you are freezing it for later, you don’t bake it yet. You bake it when you are ready to serve.:)
Perfect to have these in the freezer for those crazy mornings!
This recipe is going to be a huge time saver for me. Thank you!
So do I wrap them in a damp paper towel before freezing? Won’t this make them soggy?
You wrap in foil before freezing and wrap in the paper towel before microwaving. Hope this helps. π
I love breakfast burritos. I wish I had one right now! Great idea.
Breakfast burritos are great, I really should make them more often as your recipe has reminded me! Look tasty
This looks fun! So what do I do when I take it out of the freezer?
Can I let it defrost overnight in the fridge so it just requires a quick microwave in there morning?
I just microwave it while its frozen, but I guess you could defrost it and microwave it for less time. Good luck, let me know if it works for you! π
I love breakfast burritos this recipe is great. My day starts at 2 am I put mine in the fridge the night before when I pack my lunch when I get to work right before I get in my truck I zap it foe 1 min. Reroll in foil so when I’m on the road by 4 am I got breakfast AWESOME

Do you use 12″ tortilla’s?
Yes. π
is it ok to use bacon?
Sure you can, let me know how it turns out for you.
After freezing the burritos, in the morning do you take off the foil and the paper towel then wrap a new damp paper towel around the burrito before microwaving?
You freeze it with just the foil on it. When you are ready to reheat, you take the foil off and wrap it with a damp paper towel to prevent it from drying out in the microwave.
Could you update the freezing instructions above because they say to wrap in a paper towel, then in foil before putting in a freezer bag.
Thanks Kelly! It has been updated! π

How long can these last in the freezer for? Also how many does this make, all 20 of the wraps? Thanks.
Made these today and my husband and 2 year old gave a thumbs up! I only used 16 eggs, added 2 extra cups of ham, used the food processor on 2 pepper and a large sweet onion (used 2.5 cups of this mix) and added a cup and a half of rice to stretch the completed mix further since rice freezes well. I ended up with 28 burritos and am very happy with how they turned out! Thank you for the basic instructions, this was very cheap and easy to do, especially since I ended up with so much!
I’m glad you and your family enjoyed them! π
How do you heat them once frozen? Just don’t want any complaints about being “soggy”.
If you reheat them according to the instructions, they will not be soggy. The damp paper towel keeps it from drying out/ becoming stale in the microwave. All of the water should evaporate out of the paper towel leaving the tortilla perfectly soft, but not soggy. Hope this helps! π
Hiya, what size tortillas do you generally use for these? Thanks!
I like to use a medium sized tortilla, but any tortilla will work. π
Hi! These looks scrumptious! How long do you think they will keep in the freezer? Thanks!
These sound perfect for my son to grab on his way out to work. Thanks for the reheating tips.
I made these yesterday. This morning I sprayed my George Foreman grill with butter flavored Pam and grilled them until they were hot and toasty.
Those tortillas look amazing, what brand did you use?
Thanks! They are the homemade ones on my blog! π
I love making and eating π breakfast burritos but then have to eat them for days. This is perfect since I can pull one out when the mood strikes. I also appreciate that they don’t have potatoes in them as so many breakfast burrito recipes do. Thanks!

How long can I leave them in the freezer?
Up to three months. Enjoy! π
So do you freeze them cooked or uncooked?
The filling is the only thing that’s cooked when you freeze them. Then just reheat! π
Do you happen to have nutirtional value for how you made them?
Did you use the large or small tortillas?
I used homemade tortilla here but they are closer to the size of a small tortilla than a large one. π
Can you provide your tortilla recipe?

How many burritos does this recipe make and how many to a serving?
It makes about 20 burritos. A serving is 1-2 burritos. I normally eat 1 1/2 burritos and give the other half to my two-year-old along with some fruit for her breakfast. I hope this helps!
Thanks!
Maria π
What if you don’t have a microwave, but want to freeze them?
To reheat without a microwave, I would bake them at 400F for 12-15 minutes.
Thanks!
Maria π
When you open one of the burrito that was freezed, how do the eggs looked? Mine looks brownish rather than how they were yellow when placed in the burrito. Just want to make sure that’s normal.

Would you bake the burritos and then freeze them? Or are they still good just to freeze and heat in microwave.
Hi Elizabeth! No baking has to be involved, just make the filling on the stove, assemble, package, freeze, and reheat in the microwave when ready. π Or if you are reheating a bunch at once, baking is a great option, but no baking them before freezing. Thanks!

I would like to make this for. church breakfast….but would need to serve about 100 to 150 people. What would be the proportions for this size dish?
Thanks,
Maria
It makes about 20 breakfast burritos. So maybe multiply it by 8 to have enough for everyone! π
hello,
how long do you microwave for after freezing? to heat up again.
Thank you!
Hey! I thaw them first in the fridge overnight, then I microwave them for about a minute. It just depends on your microwave. I would start with a minute and adjust for more or less time depending on your results. π
