Beer cheese sausage soup is a tried and true recipe that is satisfying and bursting with delicious flavor. Perfect for busy weeknights or get togethers with friends. Beer cheese sausage soup is so creamy and thick with chunks of potato and sliced sausage, you are sure to want to make it again and again!

Here is how to make it:

Start by slicing your smoked sausage into 1 inch rounds. Place the sausage and butter in your pot, and cook until slightly browned.

Add the chicken broth and potatoes bring to a boil. Once the soup reaches a boil reduce heat and let simmer for 10 minutes.

Mash the potatoes slightly with a potato masher or by pressing them with your mixing spoon into the side of the pot. Add milk, cream, beer, Velveeta, onion powder and salt and pepper.

Cook for an additional 10 mins stirring occasionally. Once the cheese is melted, remove from heat and let sit to thicken a bit before serving.

Ingredients:

  • 1lb. of Smoked Sausage
  • 2 tablespoons of Unsalted Butter
  • 3 cups of Chicken Broth
  • 6 Red Potatoes (cut into 1 inch squares)
  • 1 1/2 lb. of Velveeta Cheese (cut into 1 inch squares)
  • 1 cup of Whole Milk.
  • 1 cup of Heaving Whipping Cream
  • 1/2 cup of Beer
  • 1/4 teaspoon of Black Pepper
  • 1 teaspoon of Onion Powder
  • Salt for Taste
  • Chives for Garnish

Instructions:

  • 1. Start by dicing your smoked sausage into 1 inch slices.
  • 2. Take your diced sausage and butter and place then in your pot
  • 3. Cook until slightly brown.
  • 4. Add the chicken broth and potatoes bring to a boil.
  • 5. After you bring them to a boil reduce heat and let simmer for 10 minutes.
  • 6. Mash the potatoes slightly.
  • 7. Add your milk, cream, beer, Velveeta, onion powder and salt and pepper.
  • 8. Cook for an additional 10 mins stirring occasionally.
  • 9. One cheese is melted, remove from heat and let thicken.
