For when I want to only have 2 or minutes of prep, or really don’t have it in me to cook (over-tired mamas raise your hands lol) this recipe can be a real lifesaver.
Just to be able to dump a few things in the slow cooker and be done with dinner REALLY appeals to the version of me who was up all night with the baby, and chased 2 toddlers around for hours already. I’m pretty sure that’s just how I am not not just a version of me lol. I’m ALWAYS looking for easy recipes I know my family will actually eat, and slow cooker salsa verde chicken ALWAYS gets eaten without complaints from my family of picky eaters.
My husband prefers to do chicken taco bowls with it, but the kids and I prefer to use our salsa verde chicken in burritos with just some cheese and sour cream.

Slow Cooker Refried Beans
Ingredients:
- 3-4 large boneless skinless chicken breasts
- 2 cups salsa verde
- 2-3 tsp. cumin
- 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
Instructions:
- Place the chicken breasts in the bottom of a slow cooker. Sprinkle with cumin, salt, and pepper. Pour the salsa verde over the top. Cover and cook on HIGH for 4 hours. Transfer chicken to a cutting board or large plate, and shred. Add the shredded chicken bak into the slow cooker and toss with the salsa verde. Serve in burritos, tacos, on top of a salad, etc.
