These keto taco stuffed peppers are a meal of their own! They work great without the help of a side. You can freeze the peppers after baking and you will have a dinner ready straight from the freezer for next time.
Ingredients:
- 4 medium green peppers, halved
- 1.5 lb ground beef, browned
- 1 packet taco seasoning mix
- 1-1/2 cup cheddar cheese
- 1 cup sour cream
- 1/2 cup salsa
Instructions:
- Preheat oven to 350° F. Wash peppers then slice lengthwise in half through the middle and remove seeds. Place the peppers in a casserole dish (that will fit in your microwave) with 1/4 cups water. Cover and microwave 10 minutes.
- While the peppers are microwaving, brown the ground beef until cooked through. Add the taco seasoning, stir and cook an extra minute. Mix in the sour cream, salsa, and 1 cup of the cheddar cheese.
- When the peppers are done, transfer them to a plate. Dry and grease the casserole dish. Stuff the peppers with the filling and place back into the casserole dish. Top with the remaining cheese. Bake 20-30 minutes or until the cheese is melted and bubbly. Top with your favorite taco ingredients and serve hot!
