Beef Stroganoff

Normally my mother is the one to make the beef stroganoff. But last yesterday she was at the hospital all day with my great grandfather a.k.a. “Bumpa”  (love that guy) so I was left to make it by myself. I don’t know why but I was always scared to make it. Kinda like my weird fear of serving lasagna…don’t judge.

Once I started making it,  realized how easy it was going to be. I didn’t have any egg noodles in the pantry so I recruited some small/medium/big hands….. okay maybe it was everyone in the house.

Thank goodness they agreed because it would have taken me almost an hour to mix, roll, cut and twist enough noodles for ten people. With everyone helping it took about twenty-five minutes. And I really enjoyed cooking with everyone, we had a good time. We finished this process a little before lunch and let them dry on stacked trays on the counter until we were ready to start dinner. beef stroganoff

 

As for the sauce, I have seen my mother make it many times before so I knew generally what I was supposed to be doing, but I didn’t have the recipe. Having a recipe is, ya know, kind of important when you are trying to make said recipe. So I called my mother at the hospital (Bumpa was doing alright, thank God), and (strangely) she had the whole darn thing memorized. She…..is an amazing woman to say the least. Not only does she have all 8 of her children’s names, favorite colors, shoe sizes, favorite dinner, and birthdays memorized, but apparently, she memorizes recipes too?!?!?!

 

The final product was, in my mothers words, SLAMMIN’!!! Guys, I have never heard anyone but her say that. Is it an 80’s thing???

Here’s the recipe:

 

Beef Stroganoff

Serving Size: About 5

Ingredients:

  • 1-1/2 pounds of ground beef
  • 4 tablespoons All Purpose Flour, divided
  • 1/2 teaspoon Kosher Salt
  • 1 tablespoon butter
  • 1 cup sliced Mushrooms
  • 1/4 cup finely diced Yellow Onion
  • 3 cloves chopped Fresh Garlic
  • 2 tablespoons Butter
  • 1-1/4 cup Beef Broth
  • 1/4 cup Dry White Wine
  • 1 tablespoon Worcestershire Sauce
  • 3/4 cup Sour Cream
  • Salt and Black Pepper, to taste
  • 12 ounces Egg Noodles, cooked as directed on package

Instructions:

  • Heat a 10-inch skillet over medium-high heat with 2 tablespoons of butter. Once hot add in the ground beef and cook a few minutes until it's about halfway cooked.
  • Add in the sliced mushrooms, diced onions and chopped garlic. Stir and cook until the mushrooms and onions are soft. About 4 minutes.
  • Remove the beef and onion mixture to a clean bowl and set it off to the side.
  • Reduce the heat under the pan to medium and give it a chance to cool down before adding two tablespoons of butter. Once melted add in the 3 tablespoons of all purpose flour. Whisk and cook the roux for 2 minutes.
  • Pour in the beef broth and wine. Whisk and let it cook until thickened. Add a tablespoon of Worcestershire sauce, the beef and mushroom mixture, season with salt and pepper and stir in 1/2 to 3/4 cup of sour cream.
  • Heat through and serve over cooked egg noodles.

  2. This looks so good and I can make it for Bumpa Tom, who is on a low sodium diet, by using low sodium beef broth, unsalted butter and leaving out the salt. Thanks for posting this.

  3. I LOVED my mom’s beef stroganoff, so it is fun to watch someone have to wing it with a phone call. One of our most memorable dinner failures in my family was when my mom was making beef stroganoff and she went to add a little bit of salt and the top wasn’t on the container tightly. All of the salt fell into the skillet, and she scooped out what she could with a spoon, and served it to us anyway. It was… Disgusting. We ordered pizza and had a good laugh. But when she made it right, it tasted SO good! I will have to try your recipe, thanks for sharing.

  4. what a great memory! plus, an amazing mom! I think its a mom thing…. it must just come to you someday 🙂 I havent seen ground beef before in a stroganoff – I’m certainly going to have to try it!
