Refrigerator Dough {Multi-purpose}

Refrigerator dough is a must have staple in our home! It is so versatile and whatever recipe you end up using it for you will NOT be disappointed. Every recipe I have ever used refrigerator dough for has turned out amazing! There is a rich flavor that complements the other ingredients and tastes so good alone if you use it as a loaf of bread.

Refrigerator Dough | Ten at the Table

It takes just just 20 minutes or less to pull refrigerator dough together. Then when you are ready to use it the options are endless!Β Β You can use it for biscuits, rolls, butter-horns,Β cinnamon buns, bread, and even pizza!

I am all for recipes that require minimal time and effort. Which is why refrigerator dough is so high up on my list of favorite recipes!

To use it for bread: Break off 1/2 to 1/3 of the dough roughly. Form the dough roughly into a loaf shape, place in a greased loaf pan, let rise about an hour and bake at 350F for 25-30 minutes. I love slices of refrigerator douhg bread dipped in this Chipotle Gouda Queso Dip!

Here’s the recipe:

Refrigerator Dough {Multi-purpose}

Ingredients:

  • 2 1/2 teaspoons yeast
  • 1 1/2 cups hot water or milk
  • 1 cup mashed potato
  • 2/3 cup sugar
  • 2/3 cup softened butter
  • 2 eggs
  • 1 1/2 teaspoons salt
  • 6-8 AP cups flour

Instructions:

  • Dissolve yeast in water in a large bowl. Stir in mashed potatoes, sugar, butter, eggs, salt, and 3 cups of the flour. Beat until smooth. Mix in enough remaining flour to make dough easy to handle, about 3 or 4 cups. Turn dough onto a lightly floured surface and knead until smooth and elastic, about 5 minutes. Place into a large, greased bowl. Flip the dough so that the greased side is up and refrigerate for at least 8 hours, but no longer than 5 days.

  2. I just found your blog from Raising Homemakers. I see so many recipes you have posted that I want to try, but I’m confused on what to do with some of them. Meaning I need more details. What do you do with the bread dough once you take it out of the fridge? Do you use the whole bowl for one loaf, do you need to let it sit awhile, and what do you set the oven temp on and how long to bake? I’m an inexperienced bread maker. πŸ™‚ Your biscuit recipe says one cup of butter. Did you really mean one cup of butter and not one stick or one pound? Yes, cooking doesn’t come naturally to me. I was raised on box, but have moved away as much as I can from processed lately. I also have ten at my table. Thanks!

    I think based on the amount of flour, this recipe would make two loaves. I would bake this at 350* F (because of the amount of sugar). For buns, 15-20 minutes; pizza, 20-26 minutes depending on amount of toppings (I would check to bottom of the crust to see how dark it’s getting around the 20 minute mark); loaf, approximately 45 minutes.

    I haven’t made this recipe, but these are my general guidelines for white bread.

  7. Hi Maria. I saw this post on the Weekend re-Treat Party and had to check it out, because we make a lot of breads on My Sweet Mission. I don’t think I’ve ever heard of adding mashed potatoes to a bread dough recipe before. What is the mashed potatoes function, or is it just added for extra flavor?

    So, I’m assuming that once you take it out of the frig and form it into a loaf or rolls it needs to set and rise??? Should the dough come to room temp before shaping?

    • When I use it for bread or rolls, I knead 5 minutes, rest 5 minutes then shape. I then let it rest to desired height and bake. It depends on what recipe calls for this dough. I will have some posts coming out soon using this dough, so stay tuned Sherry!
