Perfect Breakfast Burritos {Freezer-Friendly}

We all know how Monday goes… Just had a great weekend, woke up to a major “to-do” list, and you can’t even get the kids out of bed. Once they’re up, you gotta make sure each one is wearing clean matching clothes and has all of the papers they need signed. Sometimes they can’t find their backpacks, or their other shoe. And sometimes you have a massive migraine and you’ve got about 12 minutes to be out the door.

Oh, but you also have to get food into their bellies before you can think about finding your keys.

Mornings like these, I like to break out the breakfast burritos from the freezer. All I have to do is warm them in the microwave, and serve! Super easy, super quick, and it makes the whole morning seem less stressful.

The burritos themselves are very delicious, and filling. Imagine a bowl of amazing scrambled eggs with peppers, onions, and sausage. Now imagine its wrapped in a tortilla for convenient consuming. Yes. That’s exactly what your Monday needs! Is it not?

They are also loaded with protein to keep everyone fully charged for the day ahead.

Here’s how I make it:

Saute the onions, the green pepper, and the sausage in the butter until the meat is browned. Beat the eggs and the milk together and pour it into the skillet with the onions and peppers. Add the salt and pepper. Cook, stirring occasionally, until eggs are set.

Scoop 1/2 cup egg mixture onto tortillas.

Sprinkle with cheese, and fold the tortilla up like a burrito.

Freeze or put all burritos in a baking dish, and bake at 350 degrees for 20 minutes or until heated through.

Freezer Instructions:

Wrap burrito in a sheet of foil. Seal tightly and place in freezer bags. When bag is full, remove all air and seal. Freeze.

To serve: Remove foil and put damp paper-towel-wrapped burrito in microwave. Reheat for around one minute. Serve with salsa.

Ingredients:

  • 1/4 cup butter
  • 1/3 cup chopped onion
  • 1/3 cup chopped green pepper
  • 18 eggs
  • 1/2 cup milk
  • 1 cup breakfast sausage (or chopped ham)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups shredded cheddar cheese
  • 20 flour tortillas

Instructions:

  • Saute the veggies and sausage with the butter. Beat eggs and milk, and add it to the pan.
  • Add salt and pepper, stirring occasionally, until eggs are set.
  • Scoop 1/2 cup egg mixture onto tortillas. Fold ends under and roll up. Freeze or put all burritos in a baking dish, and bake at 350 degrees for 20 minutes or until heated through. Serve with salsa.

    Made these today and my husband and 2 year old gave a thumbs up! I only used 16 eggs, added 2 extra cups of ham, used the food processor on 2 pepper and a large sweet onion (used 2.5 cups of this mix) and added a cup and a half of rice to stretch the completed mix further since rice freezes well. I ended up with 28 burritos and am very happy with how they turned out! Thank you for the basic instructions, this was very cheap and easy to do, especially since I ended up with so much!

  2. How do you heat them once frozen? Just don’t want any complaints about being “soggy”.

    • If you reheat them according to the instructions, they will not be soggy. The damp paper towel keeps it from drying out/ becoming stale in the microwave. All of the water should evaporate out of the paper towel leaving the tortilla perfectly soft, but not soggy. Hope this helps! 🙂
