Homemade Nacho Cheese

The other day the kids were asking for nachos, not just chips and salsa, for their snack. I try to make a little bit more elaborate snacks during the weekends since I have a little more time to work with.

It was one of those lazy Saturdays where everyone got up late and we were eating breakfast at 11 am.  We don’t often get to sleep in like that so it totally throws off our usual schedule. Since breakfast was so late,  I decided to have a heavier snack than usual.

This homemade nacho cheese sauce is quick and simple to make. All of the ingredients are probably in you fridge and pantry already. You can control the heat level easily with the amount of cayenne pepper you add. I leave it out entirely when serving to our toddler.

When making the rue for the base, you want to let it bubble for one minute to remove the flour taste from the sauce. Once the milk is in, keep stirring and scraping the bottom so that the milk doesn’t scorch on the bottom. Slowly add the shredded cheese to ensure that you don’t end up with a clumpy mess. You also really want to lower the heat before adding the cheese, because if you overheat it it will me a grainy mess! One more note: I use garlic powder but minced garlic would also work well, just add to the rue after the flour.

Homemade Nacho Cheese

Ingredients:

  • 4 T butter
  • 2 T flour
  • 2 cup whole milk
  • 1/2 teaspoon paprika
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/4 teaspoon cayenne pepper
  • 4 cups shredded cheddar cheese
  • salt to taste

Instructions:

  • Melt the butter in a sauce pan over medium heat, make sure you do not burn the butter.
  • Add the flour one tablespoon at a time until incorporated.
  • Heat the flour/butter mixture over medium heat for 2-3 minutes stirring constantly.
  • Slowly add the milk 1/2 cup at a time, and then stir in the spices.
  • Slowly add the cheese a cup at a time until smooth.
  • Add salt to taste.
