Homemade Biscoff Cookies

One night, at the end of a church event, someone started passing out packages of candy and cookies. I didn’t recognize any of the brands, and like an idiot I took three random packages.

One was a raspberry cream filled chocolates, and the second one was orange cream filled chocolates. They were awful. Just awful. They tasted fake and they gave me a migraine. (Maybe it was something in the filling?)

So by the time I got to the third package I was pretty scared. I looked at the label and was surprised to see that it contained mostly good ingredients. No high-fructose corn syrup, corn syrup, or MSG. I was thinking okay, so far so good. But I was still skeptical and not ready to dive into the cookies. After the last two times I had tried something new…well, you’d be nervous too!

I asked my mother what biscoff was just a yummy, buttery cookie that people typically eat with a cup of coffee.

The next morning I tried the cookies with my coffee. <—– Best decision ever.

It is soooo good! Not too sweet and goes really well with coffee. (Biscuit + Coffee = Biscoff… You’re Welcome! 😉 )

Biscoff has an amazing buttery flavor and I decided that morning that I couldn’t live without biscoff ever again.

What happened after that? I had biscoff with my coffee every morning for about three days. Then it ran out.

I went about 2 months, with nothing to eat with my coffee except these scones. Life has been rough, my friends.

Until a week ago, I hadn’t even thought to make my own. So when I stumbled across this beautiful website, my heart did a little tap dance. They had a recipe for homemade biscoff. *Hallelujah* I of course looked around at other recipes after that, because I never settle on the first recipe I see, but I ended up using this one anyway.

The only thing I changed was the type of flour. All of the recipes on the interwebz called for all-purpose flour, but the real thing tasted more like WW flour to me. They were also a brown color (like graham crackers) so I decided to use whole wheat flour.

The finished product is a yummy, spiced, buttery, crispy cookie that you could eat by itself or dunk in your coffee. You could use stencils or tiny cookie cutters to mark your cookies (like everybody else), or you could be lazy like me and just fork it. I didn’t feel like leaving it empty, so I just got my aggression for the day out on the cookies.

My favorite thing right now, hands down, is homemade biscoff. Just saying.

Here’s the recipe:

Homemade Whole Wheat Biscoff Cookies

Ingredients:

  • 2 cups whole wheat flour
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon clove
  • 1/2 teaspoon salt
  • 1/4 Baking soda
  • 1/4 baking powder
  • 1 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/4 cup packed brown sugar
  • 1 teaspoon vanilla

Instructions:

  • Pre-heat oven to 350 F.
  • In a stand mixer, cream together the butter, sugar, brown sugar, and vanilla.
  • In, a separate bowl whisk together the remaining dry ingredients.
  • Gradually, (1/3 cup at a time) add the flour mixture to the butter mixture.
  • Roll out the dough to a 1/4 in. thickness. Cut into whatever shapes you want. (I use a 2 in. tall diamond cookie cutter.)
  • Bake for 15-25 minutes (until they start turning gold around the edges.) This time depends on the size and shape of your cookie.
