Fresh Pasta {No Machine Required}

The other day I had no clue what I was going to make for dinner. Like, no idea what so ever. So my sister volunteered to make some chicken noodle soup. My brother had been waiting for some chicken noodle soup for a while, so I was so excited. And then I found out that we didn’t have any pasta. Yeah.

So I looked up how to make fresh pasta, and discovered that it only takes 20 minutes from start to food being in your belly. I had assumed that it would be difficult and time-intensive, but it was exactly the opposite!


The ingredients for fresh pasta are simple…

Flour (I like to use all-purpose flour.)

Eggs (A very important part of pasta.)

Oil (I like to use olive oil, but any neutral oil will do.)

Salt (Completely optional, and gives the pasta a tad of flavor.)

To make fettuccine , roll out 1 of the balls of dough but try to keep it as rectangular as possible. Roll the dough up lengthwise tightly. Using a sharp knife, cut in 1/2 inch increments (it’s like cutting cinnamon buns, except scaled down a bunch). Unroll each disk of dough and dry for a bit.  If you want them to look like nests just take a group of the noodles by the middle so its in half, and slowly put it down letting it layer over itself.

The bowties were super easy too! I wanted to try it because its one of my favorite pastas, but when I tried it they looked really lopsided and kinda ugly. I’m not good at getting things to look neat! 🙁 …… So then my baby brother tried it, and it looked perfect!!!  (Yes, those beautiful bowties were made by a 9 year old…) I rolled the rest of the dough, cut the rectangles for him, and he formed the rest. He now calls it “his” pasta recipe.

Making fresh pasta couldn’t be easier! The best part about it is that you don’t need a fancy machine or stand mixer attachment to make beautiful pasta at home. Your friends and family will be so surprised when you tell them it’s homemade, but you don’t have to tell them how easy it was!

Here is the recipe:

Prep Time: 15 minutes

Yield: 6 servings

Fresh Pasta {No Machine Required}


  • 2 cups all purpose flour (Cake and bread flour work too.)
  • 3 large eggs
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt, optional


  • On a counter top (or in a bowl) pile your flour, make a well in the center, and crack in your eggs into the well. Pour in the olive oil and sprinkle in the salt. Slowly mix together with your hands (or a spoon). Turn it out onto a floured surface and knead by hand until dough becomes smooth and pliable, adding flour to the board as necessary.
  • Cut the dough into quarters and let it rest for a little while before rolling it out.
  • For Fettuccine:
  • Roll the dough out into a 12x15 rectangle. Fold the dough into thirds and cut 1/2 inch strips along the shorter distance. Unwrap and let dry, or use it immediately. To cook, boil salted water, add pasta and cook until it has reached the desired tenderness. (This will depend on how old it is.)
  • For Bowties:
  • Roll the dough out into a 12x15. Cut a grid of rectangles 1-1 1/2 inches wide (straight) and 2 inches long (frilly). Place your pointer finger in the middle of your rectangle, and use your thumb and middle finger to pinch the dough inwards. Let dry, or use it immediately. To cook, boil salted water, add pasta and cook until it has reached the desired tenderness.

  1. I love fresh pasta and think I need to try this. You might want to go back and edit your instructions to note what to do with the oil and salt. I’ll never remember to read all of your comments to find what to do with it.

My friends mom always made homemade chicken noodle soup with homemade noodles and I always thought it looked hard! But this makes it sounds easy! Thanks for sharing!
