Cheesy Jalapeno Poppers

Words of the wise.

Wear gloves.

Aaaaaand don’t touch your eyes.

Please just trust me on this.

The first time I made this…hehe…was a nightmare. I didn’t know how to handle hot peppers so I just went for it like it was a bell pepper. Big mistake. My finger tips burned for days. I washed my hands. With soap. The burn remained. Also, if I licked my fingers, I could still taste the spiciness of the jalapeno on them. Guys, it hurt. Please wear gloves.

If my fingertips couldn’t handle it…how do you think my eyes would have felt?

I am not looking forward to figuring out.

So, why would someone go through all this just for a dang snack?

Ummmm, maybe because cheesy jalapeno poppers are a perfect balance of creamy, spicy, and…well…bacon! The jalapeno has softened in the oven (and become more mild), the cheese and cream cheese has gotten all melty and yummy in the middle, and the bacon is perfectly crispy. Perfect snack anyone???

It is a super easy snack to throw together and I like to make a big batch 30-40 minutes before guests arrive. Or, if I have unexpected guests, I dip into the premade stash in the freezer. Just cool and freeze after baking, and reheat in a microwave.

In case you were wondering, this is also fabulous football watching food! Again, I like to make a big batch ahead of time to pull out and reheat on game day.

Here’s how to make it:

You will need jalapenos, cream cheese, cheddar cheese, and bacon. Halve and deseed the jalapenos. Fold together the cream cheese and cheddar cheese. And cut the bacon strips into thirds.

Stuff each pepper half with the filling.

Wrap each filled pepper half with bacon, and bake!

See? Super simple!

Here is the recipe:

Cheesy Jalapeño Poppers

Yield: 3-4 servings

Ingredients:

  • 6 jalapenos
  • 3 oz. cream cheese, softened
  • 3 Tbs. shredded cheddar cheese
  • 4 pieces of bacon, cut into thirds

Instructions:

  • Preheat your oven to 375 F.
  • Fold the cream cheese and cheddar cheese together. Set aside.
  • Half and deseed the jalapenos. Stuff the jalapeno halves with the filling and wrap with a piece of the bacon.
  • Bake for 20-25 minutes.
