Easy Hot Artichoke Dip

It literally takes 60 seconds to get this dip in the oven. Having little kids in the house, I can’t be tied up for long. So this dip is reeeeeally perfect.

It also insures a serving of veggies getting into these hobbits. Not that they know, of course. I just tell’em it’s “Monster Dip” and let them think they’re eating monsters.

The recipe says to bake for 15-20m minutes, but I always (out of necessity) cook it for 20 minutes or longer. Hopefully I remember to turn off the oven after 20 minutes until I can get to it.

This dip tastes totally fine if it’s burned by the way…

Usually I have a lot of stuff to do during the bake time like cleaning up the kitchen… ooooor bathing and redressing the baby because he thought it would be fun to make a mud bath on the bathroom floor.

It couldn’t have been the tub? I mean, really?

He used bucketfuls of dirt he smuggled in from outside and water from the sink. As soon as he is tall enough to reach the faucet (with help from a stool), this is what he does???

I needed some of this easy hot artichoke dip after that business.

Even if it was burned.

Here is the recipe.

Easy Hot Artichoke Dip

Ingredients:

  • Two 14-ounce cans artichoke hearts, drained
  • One 8-ounce block cream cheese
  • 1 cup real mayonnaise
  • Cayenne Pepper
  • 2-3 green onions, chopped
  • 1 cup grated Parmesan cheese
  • Dash of Salt
  • Freshly ground black pepper

Instructions:

  • Pre-heat oven to 350 F.
  • Add one can of the artichokes, cream cheese, mayonnaise, and green onions to a food processor. Sprinkle to cayenne pepper to taste. Add the salt and a few shakes of pepper. Pulse a few times to combine (5-7 will do). Set aside.
  • Roughly chop the other can of artichokes and add to a baking dish (8x8 pan or a pie dish will work).
  • Add the mixture from the food processor to the baking dish and stir to combine.
  • Bake 15-20 minutes, or until nice and bubbly.
  • Serve hot with chips or crackers, or serve cold on a sandwich as a spread.

    • When in doubt, I make a Cajun soup. No exact recipe, I just cut up some onion, bell peppers, celery, and carrots along with whatever other vegetable I have, put it in a pot with 3/4 water 1/4 crushed tomatoes. (Make sure the veggies are covered and there is still room to add pasta or rice and let that expand too.) I add Worcestershire sauce and hot sauce until it’s flavorful enough. Boil til veggies are soft and toss in some pasta or rice and boil til that’s cooked. Season to taste and BAM! Super yummy soup. Good luck! 🙂
