Soft Gingerbread Cookies

I love mixing the dry ingredients together because it just smells like the holidays. Then when those perfectly soft cookies come out of the oven, I can yell”Cookies!” and count on the cookie trays being empties within minutes…..dontcha just love fall (sigh).

A Perfect Day…

I am one strange cookie. So the day I am about to describe to you may not be “perfect” by your definition. But to ME, it was a blast.

To start out, when I woke up coffee and breakfast were already made. That by itself, without the rest of the day, was a pretty awesome thing.

Our electric bill for these summer months have been through the roof so wanted to try some campfire cooking to cut back on using the oven, and not have to run the air conditioning all day every day. Meaning today I got to cook potatoes,  bread, beans, and burger patties over the fire. It took ALL day. But it was fun. I personally could stare at a fire like a brain dead pyromaniac…but that’s just me.

Clear Thoughts Under Water

A few years ago, in a pool, two of my younger brothers an I almost drowned each other in the middle of the deep end. I learned a lot about myself that day. At first I was thinking about saving myself. Then when I realized my brothers were in trouble, I dove down, touching my feet to the bottom, and pushed them up for air. My lungs hurt so bad, I started breathing in the water. Shockingly, the water didn’t hurt to breath in. Haha. On the bottom of the pool saving my brothers, I was not worried about killing myself down there. I just wanted to get them out. I would have continued to stand there, but then I heard a voice in my head. It told me to walk over to the edge. I started marching over to the edge, where my brothers were able to to climb out and pull me out. The air in my lungs felt soooo good! They had to help me into the house, because I felt very weak, but we were all okay.

Gaining healthy habits as children is very important. One of the more important habits is exercising. It helps to build a strong and healthy body, and self esteem. When I was in middle school I generally had a lousy time due to not being very book smart and not participating in very much class discussion. However when it came to P.E. (Physical Education), I was very confident and proud to say I lapped about half of the class every day when it was time to do laps. Some of them I would lap twice!
