Homemade English Muffins

Everybody has there favorite breakfast dishes.  Whether you like sweet or savory breakfast items English muffins are an item that can go both ways.   You can dress them up with jellies and jam or add a poached egg and ham.  We tend to not buy our bread items for cost and health reasons.  I mean homemade English muffins are so easy and cheap to make at home, we are pretty much getting ripped off in the store. On top of that can you even pronounce some of the ingredients? I mean this is suppose to be bread right not a science experiment.

I don’t know about you, but in my house fresh baked goods don’t usually see the next day unless I hide some of them. SO its a really good thing they are easy to whip up. Just get me a timer and a good book, and this girl could make 1/2 a ton a English muffins. 😉

Ultimate Cheesy Tuna Pasta Casserole

Who else celebrates Valentines Day with a group of friends?

Every year, me and my girls get together for a home cooked dinner party on valentines day (NO BOYS ALLOWED!) and we all bring a dish. Most of these dishes are skinny, or light, because most of us have just made new years resolutions to lose weight. I always try to focus more on what my body needs, rather than starving myself of something and calling it a “diet.”

I make sure I get a good amount of fat and protein to help my body function properly. This is why I bring this Cheesy Tuna Black Bean Casserole to the dinner party. It provides the essential nutrients,and it tastes great. And I make sure to cook more than necessary, so the girls can take leftovers home with them.

The first time I made it for them, they asked me for the recipe, but I didn’t have one to give them! I had just improvised a casserole using what I had on hand (trying to keep it healthful), and it was really good. Luckily, I had remembered what I did and was able to replicate it and write down the recipe.

It took, like, an hour to name it. We finally decided on Ultimate Cheesy Tuna Pasta Casserole. And I’m stickin’ with that.

Homemade Biscoff Cookies

One night, at the end of a church event, someone started passing out packages of candy and cookies. I didn’t recognize any of the brands, and like an idiot I took three random packages.

One was a raspberry cream filled chocolates, and the second one was orange cream filled chocolates. They were awful. Just awful. They tasted fake and they gave me a migraine. (Maybe it was something in the filling?)

So by the time I got to the third package I was pretty scared. I looked at the label and was surprised to see that it contained mostly good ingredients. No high-fructose corn syrup, corn syrup, or MSG. I was thinking okay, so far so good. But I was still skeptical and not ready to dive into the cookies. After the last two times I had tried something new…well, you’d be nervous too!

I asked my mother what biscoff was just a yummy, buttery cookie that people typically eat with a cup of coffee.

The next morning I tried the cookies with my coffee. <—– Best decision ever.

It is soooo good! Not too sweet and goes really well with coffee. (Biscuit + Coffee = Biscoff… You’re Welcome! 😉 )

Biscoff has an amazing buttery flavor and I decided that morning that I couldn’t live without biscoff ever again.

What happened after that? I had biscoff with my coffee every morning for about three days. Then it ran out.
