Every year on Mother’s Day, I have the worst gift. It all started back in second grade…..DUN DUN DUN! I glued jolly ranchers to construction paper in the shape of a heart.Which she couldn’t eat because it was so covered in glue… So it just sat there… taped to the wall… collecting dust. Until eventually……..I stole all of the jolly ranchers. One by one.

Meanwhile, my sister (the kind with the neat handwriting that colors in the lines) gave her a stack of handmade coupons promising hour long foot massages. Really sis?!?!?! You gotta out do me by that much???

Then in third grade, I painted a terracotta pot for her to plant flowers in. It was a mess! I am not the most artistic girl around and crafts aren’t really my thing. I don’t remember her face when I handed it to her because I made sure not to look.

Ah yes. Then there was fourth grade. My class made knee pots for the mothers and mine was the most misshapen disaster that was ever placed on this earth. Seriously. Think of the ugliest possible clay pot made by a fourth grader you’ve ever seen. No, really. Take a minute to think about this.

Garlic Parmesan Baked Potato Wedges

A few days ago, I need fries. I needed fries badly. I went through the list of fast food restaurants in my head trying to think about who had the best french fry. None of them seemed like they would satisfy my craving. What I really wanted was the baked potato wedges my mother made us as kids on burger night. I went to the kitchen, and did an interesting spin on my mothers baked potato wedges. Although, they really were perfect the way she made them.

I can still see the multi-colored plastic plates we ate on, and the hologram Hannah Montana cups, leftover from my little sister birthday party.

At the time my mother had 7 children (now 8), and she needed cheap, healthy recipes that were kid friendly. Baked potato wedges fit the bill exactly.

Another thing that was important to a mother of so many very young children, was that it needed to turn out every time. Perfectly.

Imagine dinner getting screwed up at the last minute and you have 7 hungry hobbits to feed…..

Perfect Breakfast Burritos {Freezer-Friendly}

We all know how Monday goes… Just had a great weekend, woke up to a major “to-do” list, and you can’t even get the kids out of bed. Once they’re up, you gotta make sure each one is wearing clean matching clothes and has all of the papers they need signed. Sometimes they can’t find their backpacks, or their other shoe. And sometimes you have a massive migraine and you’ve got about 12 minutes to be out the door.

Oh, but you also have to get food into their bellies before you can think about finding your keys.

Mornings like these, I like to break out the breakfast burritos from the freezer. All I have to do is warm them in the microwave, and serve! Super easy, super quick, and it makes the whole morning seem less stressful.

The burritos themselves are very delicious, and filling. Imagine a bowl of amazing scrambled eggs with peppers, onions, and sausage. Now imagine its wrapped in a tortilla for convenient consuming. Yes. That’s exactly what your Monday needs! Is it not?

They are also loaded with protein to keep everyone fully charged for the day ahead.

Cheesy Jalapeno Poppers

Words of the wise.

Wear gloves.

Aaaaaand don’t touch your eyes.

Please just trust me on this.

The first time I made this…hehe…was a nightmare. I didn’t know how to handle hot peppers so I just went for it like it was a bell pepper. Big mistake. My finger tips burned for days. I washed my hands. With soap. The burn remained. Also, if I licked my fingers, I could still taste the spiciness of the jalapeno on them. Guys, it hurt. Please wear gloves.

If my fingertips couldn’t handle it…how do you think my eyes would have felt?

I am not looking forward to figuring out.
