Mac & Cheese for One

I was going to make this post a little more adult oriented, like, “Here’s an easy lunch when you don’t want a ton of leftovers!” BUT, my inner mama is about to show, haha! My 3-year-old daughter tends to wake up around 3 a.m. a few times a month because she has to go potty and is also “starving” as she puts it.
